Cucumber Black Rice Salad

OMG, so simple, so delicious!! Thrown together in seconds! You simply toss:

1.5 cups COOKED black rice/grain/blend
1 medium cucumber chopped
1/8 red onion chopped
handful of pecans
handful fat free feta
drizzle of olive oil
drizzle of coconut vinegar

That is IT. I didn’t even use any herbs or seasonings, though you could certainly do so. I used leftover black rice I had cooked the other night for my stir fry that was actually a blend 2parts black rice, 1 part green lentils, just cooked like rice but with some added legume protein. So satisfying and filling but so good for you! I wouldn’t change a thing, though I could see it taking on a greek salad motif with some olives and tomatoes…
