Sweet Potatoed Kale Sauté!

Yummy! I love a simple, colorful, veggie sauté! This one did not disappoint 🙂

You need:

1 large sweet potato, sliced

2 cloves garlic, minced

crushed red pepper to taste

1/2 red onion, sliced

1 spray coconut oil

water to keep moist

Heat skillet with coconut spray on medium and sauté sweet potato and garlic for a coupe minutes until slight browning occurs, then add red onion, kale, red pepper, and about 1/2 cup water to prevent sticking. You could use more oil instead, but is not necessary and the water softens the veggies more quickly (via steaming) . Continue to sauté until kale is slightly wilted and sweet potatoes are soft, adding more water as needed to prevent sticking.

Serve over brown rice and enjoy!
