I know, another brownie recipe? Yes, I love brownies, what can I say. I will never stop experimenting 🙂 I pulled some of these out of the freezer today and realized they were too good to have never posted! Vegan, gluten-free, oil free, flourless, no sugar added! What they do have includes all natural ingredients, protein, and chocolate goodness! These chewy brownie morsels can make you forget how healthily you are eating these days, or at least keep you from feeling deprived! When it is this good for you, go ahead and eat dessert every day!
Blend together until smooth:
1 and 1/4 very ripe banana
1/6 cup applesauce
3-4 medjool dates, depending on size
1/2 tsp cinnamon
3 heaping TBS cocoa powder
1 tsp vanilla
1/4 tsp baking soda
1/4 tsp baking powder
2tbs flax + 6tbs warm water, let sit till gelatinous 5-10m in fridge
1 can organic black beans.
Chocolate chips- I highly recommend topping with a few chocolate chips!
Scoop into pre-oiled mini muffin tins.
Bake at 350 for about 12 min, edges should pull away and slight cracking occurs to surface. Let cool before removing. I pop mine into the freezer for about 5 minutes to accelerate the cooling, then remove! Will be very soft and gooey inside, enjoy!
Store refrigerated. I think I like these even better on day 2 after refrigerating overnight. They become fudge-like in the center 🙂 They also freeze really well, and thaw out super chewy and creamy in the microwave. Enjoy!!
