This will show you right now what a party animal I am, but I love to unwind on Friday with a delicious dinner, kicked back on the couch 🙂 I usually go for something fun or different like homemade pizza, or I’ll treat myself to my favorite salad at Pluto’s with a stop by Yumma’s to get some hummus and pita. There is something about the creaminess of hummus with the crunchiness of salad that I adore. Tonight I made my own Friday night Pluto’s salad (“main salad, mixed greens, no meat”) with hummus, and I have to say, it might just be better than the real thing 🙂 The hummus certainly makes this a filling salad, one that replenishes after a long day and week.
You need:
– a handful of beets, peeled, cubed, and roasted with coconut oil, garlic powder, chopped onion, oregano, parsely, and cardamom
– a handful of chopped kabocha squash (roasted 45min on parchement paper)
-1-2 Tbs fresh hummus (recommended recipe Here.)
-2 sprays balsamic vinegar
-2-3 cups mixed greens
-4-5 black olives, cut in half
-green onion, 2-3 tbs
-2 tbs chopped cucumber
-2 tbs chopped carrots
– optional handful of squash seeds (kabocha squash seeds baked on parchement paper x20min)
Put greens in a large bowl, and spritz with a little balsamic vinegar. Arrange veggies on top, followed by a dollop of hummus, then garnish with green onions and pumpkin/squash seeds. Mix together and enjoy!!
