Superfood Carob Squares

These were inspired by a carob/spirunina energy bar I fell in love with from the bulk section at Rainbow Grocery.  They don’t taste exactly like the ones from Rainbow, but at least I know exactly what’s in these, and they are delicious and packed with healthy energy!!

You need:

2 cups packed dates

2 cups warm water 

1 cup carob

1/2 cup greens powder of choice

1/2 cup sunflower seeds

1/2 cup pumpkin seeds

1 cup flax/psyllium/wheat germ 

1 cup chia/hemp/sesame seeds

2tbs cinnamon

1tsp vanilla

1tsp almond extract
Soak dates in water overnight and throw both into blender until well pureed, adding in vanilla and almond extracts. Next combine all dry ingredients in a large bowl and turn date paste into this bow. Mix well, turn into parchement paper lined loaf pan and freeze overnight. Then cut into squares. I actually store these in the freezer in cubes, and pull out a few when I want them. They get soft in the fridge, more fudge like, but I prefer them hard.
