Hahaha, a bran muffin dessert hybrid! Chock full of nutrition, yet tastes decadent 🙂 Suitable for either breakfast or dessert!
Wet ingredients:
Plums, about 400cc
Bananas, 2 ripe
1tsp vanilla
1tsp coconut vinegar
Dry ingredients:
4tbs flax
1 heaping cup wheat bran
1/2 tsp salt
1/2 tsp cinnamon
Dash nutmeg
1/3 cup wheat germ
2/3 cup cocoa powder
3/4 cup mixed chocolate chips
Blend wet ingredients in high to purée. Combine dry ingredients in a large bowl, then pour wet ingredients into the dry. Then stir in chocolate chips. Turn into greased muffin tins.
Bake at 350f for 20min for large, 12-13 for mini muffins.
