I do a lot of these really simple salads, but this is me that turned out sooooooo yummy! No added fats, no dressing even, just juicy sweet fruits and raw greens. Pure, clean, and simple! The more ripe and fresh your fruit the better this will be!!
2-3 cups leafy greens
1/2 juicy maggo, chopped
5-6 large strawberries, sliced
3-4 dates, chopped
Toss all ingredients. Stuff face. Smile 🙂
Another vibrant, simple lunch time salad! I love the sweet citrus with the mouth burn of the jalapeños! Totally optional but so satisfying to me!! Yummmmy!
2-3 cups mixed greens
1/2 red bell pepper, chopped
1/4 zucchini, chopped
1/4 jalapeño, minced
1-3 tbs fresh cilantro
2-3 mandarin oranges
1/2 lemon, squeezed
About 1 cup chopped red cabbage
Toss all ingredients and enjoy!! 😀
Creamy morning smoothie to nourish your cells! Use frozen fruit or add some ice for water if you like a cold/frozen drink. I’m pretty happy with room temp!
8 small dates (3 oz)
vanilla, 1/2 tsp
pumpkin pie spice, dash
about 600cc water
Blend on high and enjoy this sweet and creamy drink! Serves 1-2 depending on appetite 🙂
This is one of those low-fat vegan dinners/appetizers, that is probably weird to most people, but I find SUPER delicious!!
SO simple, so quick on those days when I get home from work ravenous and need something to get me going on cooking dinner and all the other evening tasks.
You simply need:
1 head of romaine hearts, cleansed and dry
2 small steamed potatoes, cut into 2×1/2 in strips (or approximate equivalent)- i love yukon gold, so soft!
slivers of red onion to taste
sprigs of cilantro to taste
Simply place potato pieces on lettuce leaves, along with small amount red onion and cilantro. Fold lettuce leaf in half, to enclose potato piece, then you can even fold in the sides to make a compact little “burrito”!
This was so simple yet so delicious!! I was not expecting it to taste as good as it did 🙂 Optional add ins could include pumpkin seeds, cilantro, or sesame seeds. Enjoy with these or in the pure simplicity below 🙂
2 cups organic girl greens
1 large stalk celery chopped
About 6 small strawberries sliced
1/4 large lemon squeezed
About 1.5 cups chopped pineapple
Toss all together and be nourished!

All you need:
-2 cups fresh spinach
-5-6 large strawberries sliced
– about 3 medjool dates chopped (more or less to taste!)
I packed this for my lunch today, squeezing the lemon over just prior to eating. It was heavenly and didn’t taste overtly lemon-y. Really the strawberries and dates shine here!! YUMMY!
2 ingredients, that is all I used. You could certainly doctor this one up with some sunflower seeds, cucumbers, diced tomatoes, etc. but I ate it with nothing but spinach and mangoes! Weird, but delicious in its simplicity 🙂
2 cups spinach/power greens
2-3 small ripe mangoes
Cut the fleshy “cheeks” off of each mango, and cut into cubes. Scrape off from the skin and place on top of greens in your bowl. Then cut away remaining mango flesh from sides and seed. Place these remnants in blender with 1/2 cup (or so) of water. (Alternatively you could use a nut/seed or ‘milk’ of choice). Blend until a creamy sauce results. Pour over your salad, toss and enjoy!! Tasty, summery, whole, real ingredients 😀 ❤
