Pumpkin Banana Chia Bran Muffins

Fall is here and everything pumpkin. If you read this blog, you know I LOVE bran muffins, despite cooking mostly gluten free otherwise. So I had to make a pumpkin version. And I will certainly make more variations on this basic recipe. Maybe an apple cinnamon variety 😀
You need:

3 very ripe bananas

1 cup pumpkin puree

1 tbs coconut vinegar

1 tsp vanilla

1/2 tsp almond extract

1/2 tsp baking powder

1/2 tsp baking soda

2 Tbs sunbutter

Blend on high, set aside, then mix with:
1/2 cup chia seeds

1 cup wheat bran

1/3 cup oat flour

2tbs flax meal

Turn into greased muffin tins and
Bake at 350F for 25- 30 min. Enjoy!!

Downright Buttery Banana Bran Muffins

These vegan bran muffins are butter free but the almonds and flax give it a rich and creamy flavor. Sweetened only by bananas, I love thee healthy muffins. Right out of the oven they are so soft and melt in your mouth!

You need:

1 cup wheat bran

4 bananas

1tsp apple cider vinegar

1tsp olive oil

1tsp vanilla extract

1/2 cup almonds

1/3 cu flax meal

1/3 cu wheat germ

1tsp salt

1/2 tsp baking powder 

1/2 tsp baking soda
Combine all dry ingredients in a large bowl (except almonds) and set aside.

Combine al wet ingredients (which includes ripe bananas) plus almonds in a high speed blender u till puréed. Then pour into bowl of dry ingreds.
Mix well and turn into mini muffin tins, baking at 350 for about 10-12 minutes.

Chocolate Plum Bran Muffins

Hahaha, a bran muffin dessert hybrid!  Chock full of nutrition, yet tastes decadent 🙂  Suitable for either breakfast or dessert!

Wet ingredients:

Plums, about 400cc

Bananas, 2 ripe

1tsp vanilla

1tsp coconut vinegar
Dry ingredients:

4tbs flax

1 heaping cup wheat bran

1/2 tsp salt

1/2 tsp cinnamon

Dash nutmeg

1/3 cup wheat germ

2/3 cup cocoa powder 

3/4 cup mixed chocolate chips
Blend wet ingredients in high to purée. Combine dry ingredients in a large bowl, then pour wet ingredients into the dry. Then stir in chocolate chips. Turn into greased muffin tins.

Bake at 350f for 20min for large, 12-13 for mini muffins.







Heart Healthy Very Berry Bran Muffins

I’m obsessed with bran muffins. This one is chock full of fruit and heart-healthy-cholesterol-lowering ingredients 🙂 And so delicious. This one has both wheat germ and bran furor maximum nutrition, and luscious bananas, blueberries, and strawberries for sweetness and flavor!

You need:

1/2 tsp cinnamon

1/8 cardamom

1/8 tsp nutmeg

Flax meal, 1/8 cup

Wheat germ 1/4 cup

Blend of oat/quinoa/buckwheat flour 1/2 cup

Wheat bran 1.25 cup

1/2 tsp each baking soda and powder 

1/8 cup psyllium powder

1/8 cup chia seeds

Cmbine above dry ingredients in a bowl. Then combine the following wet ingredients in a blender:

4 bananas 

8 large strawberries

1/2 tsp vanilla extract

1/2 tsp almond extract

Then mix wet into dry.  Finally add in 1.25 cups frozen wild blueberries!

Turn into muffin tins and bake at 350F for 13 minutes for mini muffins, 25 minutes for regular/large muffins. Enjoy!!


Low Fat Vegan Banana Bran Muffin

OK, sorry my gluten free followers, this is one recipe, not for you. You could subs oat bran if you want (I’d love to hear what you think), but alas, it just isn’t the same as the deep dark richness of wheat bran. Bran muffins, just the kind you make from a mix from the grocery, was one of my favorite foods as a kid, and is still a food that I CRAVE at times. I actually have never had a bran muffin from a bakery or restauraunt that tasted right. Forget the raisins, the carrots, the unbeleivable sticky sweetness. Give me a straight up, almost savory bran muffin that goes best with nothing but butter. Or plain. Bran does not need loads of honey and molasses to be edible, people. It is soooo gooood to me. There is no added fat or oils involved here, and the bananas make these SO moist and chewy!! OMG!!     

So if gluten doesn’t give you issues, and you wanna give wheat bran a shot, please do. 🙂

Blend on high:

1 cup almond milk

2 bananas

4 dates 

1tsp vanilla 

Then stir in:

2tbs flax  and let sit.

Meanwhile combine in a bowl:

1cup wheat bran

1 cup red quinoa and oat flour mix (just oat flour works too)

1 tbs cinnamon

1/2 tsp each baking soda and powder

Pinch sea salt

Add wet ingredients to dry ingredients, stirring until just well moistened!

Bake at 350F for 35min. DEEELICOUSSSSS. If you eat butter, definitely put some on these. Otherwise, plain is pretty fantastic too. I may or may not have eaten 3 LARGE muffins without anything on them today. Hopfefully my GI tract can handle all that fiber!!  I plan to make another batch replete with blueberries in the very near future….
