Vegan Oreo “Blizzard”

Oreos are vegan. I didn’t say healthy, but I did say vegan. Take some frozen bananas, some vanilla beans extract and make regular banana nice cream. Then crush up some Oreos and mix em together. Truly that is all it takes for this decadent delicious treat. Seriously easy and indulgent 🙂  And hey, if there was ever a day to eat junk like Oreos, it’s Halloween!  👻 🎃 
You need:

3 frozen bananas

1tsp vanilla extract

4 Oreos (or more)
That’s it, ejnoy!!!

Low Fat Vegan Ice Cream!

True life, I thought I could NEVER be vegan for this simple reason: ICE CREAM.  Frozen yogurt, pudding, cheese, but mostly ice cream has always been my favorite food, my number one food to overeat, and the number one treat holding me back from full veganism. Then I discovered “nice-cream”.  Took 4 frozen bananas from the freezer, added a tsp of vanilla extract and a splash of unflavored/unsweetened soymilk, and 2 minutes later, I had 4 servings of deliciousness. Seriously, the texture is out of this world. And wihile mildly banana-y, not in an overpowering way. If you add vanilla, it tastes like vanilla, cocoa powder, tastes just like a chocolate soft serve. I have NO idea how simply freezing a banana turns it into the fluffy, stiff-peaked, soft-serve of my dreams, but it DOES!  I chop my bananas before I freeze them just for ease of blending, and fortunately I invested in a vitamix, ready with a tamper to keep bananas in the line of blending, so it is quite easy. You will not believe this is dairy free (and also low fat!).
You need:

Bananas, frozen

Non-dairy mild to aid blending

A strong blender or food processor
Flavors optional:

Vanilla extract

Cocoa powder

Frozen fruit of choice
Blend, serve, add toppings if you like, and enjoy!!!  Ooh now I need to buy some vegan ice cream cones!

Banana Chip Pudding (Or Ice Cream!)

I love pudding. Duh. This is a pretty simple recipe, sweetened only by very ripe bananas and a few chocolate chips! Does not taste like tofu, does taste like bananas and chocolate 🙂

All you need:

1pkg Morinu extra firm silken tofu

3 ripe bananas

1 tiny piece Madagascar vanilla

1/4 cup choc chips

Place all ingredients in high speed blender and blend until smooth and creamy. Pour into single serving dishes and refigerate overnight to set!  
Option 2: * recommended* Pour into ice tray molds and freeze overnight. Then pop out and place back into high speed blender. You may need to thaw them slightly and/or add some milk of choice to help them blend easily, but the yeild will be a healthy ice cream!! Enjoy!

Chocolate Peanut Butter Ice Cream!!

Oh my, this is the comfort food of my dreams. Honestly ice cream is one of my very favorite foods and I never thought I would find anything that was an adequate substitute in vegan cuisine. Since getting my vitamix I have used it for many awesome recipes, but this guilt free, delicious dairy-free ice cream is now my favorite thing I can make, period. All I can say is that if I knew it made ice cream, I would’ve bought this machine years ago!!!

You’ll need:
-2/3 cup unsweetened almond milk
-6oz greek style plain cultured coconut yogurt
-2tbs natural peanut butter
-1/2 tsp vanilla
-3tbs cocoa powder
~
-1 ripe banana chopped into slices
-I handful chocolate chips

Blend top 6 ingredients together.
Pour into 3 small or 2 large ice trays and freeze until solid.

Freeze banana slices in a ziplock along with the handful of chocolate chips while cubes are setting as well.

Then pop cubes, chips, and banana coins in high powered blender or food processor adding almond milk as needed to process.

Voilà! Soft serve magic 🙂
