I don’t know what to call these, but for real, they taste like candy. I swear it’s like eating a twix or snickers, or something I remember from childhood. I can’t put my finger on exactly what these taste like, but they taste like a candy bar. I’m sure I’m not the first person to come up with this, but here’s my story: I’m in the final weeks of pregnancy, and I read some studies about the benefits of eating dates for natural cervix dilation and even shortened labor lengths. Debatable sure, but there are a couple of studies out there that made me say, shoot, worth a try! This means eating 3 large medjool dates every day from 36weeks onward. I mean dates are delicious, but they get really old really fast when you eat them every single day! And with my glucose intolerance, I am tasked with eating these instead of other fruit in my diet, and pairing them with some protein/fat to help delay their sugary release into my bloodstream! So I’ve been eating them with a lot of peanut butter, almond butter, pecans walnuts, and pistachios. Lately, I’d say in the last week or so, my craving for chocolate and sweets in general has suddenly skyrocketed, and sticking to my diabetic diet is becoming increasingly difficult. So in my boredom with eating the same old, the fact that I’ve hopefully got only a week left to go, and in light of my intense chocolate cravings, I came up with a chocolatey modification of my typical nut butter/date snack.
Here’s all I did: Cut open several medjool dates and remove the pit. Fill this opening in the middle with peanut butter or almond butter (while both are good, I prefer the peanut butter ones by far!). Then I popped these into the freezer for about an hour. Next I put some 80% dark chocolate into the microwave, stirring about every 10 seconds until melted (for a total of about 40seconds but depends on the amount of chocolate and your microwave). Then I rolled the dates in the chocolate and returned them to the freezer to set. I recommend storing in the fridge to keep everything intact and from melting! These are delicious and decadent, and not diabetic friendly, but if we compare them to a Twix or snickers bar, these are packed full of micronutrients, antioxidants, vitamins, minerals, no preservatives or fake foods, and way less refined sugars. So, I call this a win :). YUMMY.
I’ve been on a daily smoothie kick recently, and this one stood out. I’m trying get more watery, raw, fresh produce in first thing in the morning, plus something to drink is so much easier to take to work! I sweetened this one up a tad with some stevia and some flavor extracts, and the result was rich and creamy! Super tasty. Plus superfoods 🙂
-1 sambazon packet of Acai
-1/4 bag frozen mixed berries (so 3-4oz)
-Water to blend (about 2/3 cup)
-Ice to taste (about 1/2 cup)
-Vanilla extract, 1/4 tsp
-Almond extract, 1/8 tsp
-Stevia, about 7 drops
Throw them all into a blender and pour into a large container (or into cups to serve two) and enjoy! I find a breakfast like this keeps me energized and not dragging through my morning. All that fiber, water, and micronutrients are surprisingly filling!
This was so simple yet so delicious!! I was not expecting it to taste as good as it did 🙂 Optional add ins could include pumpkin seeds, cilantro, or sesame seeds. Enjoy with these or in the pure simplicity below 🙂
2 cups organic girl greens
1 large stalk celery chopped
About 6 small strawberries sliced
1/4 large lemon squeezed
About 1.5 cups chopped pineapple
Toss all together and be nourished!

-5-6 large strawberries sliced
– about 3 medjool dates chopped (more or less to taste!)
I packed this for my lunch today, squeezing the lemon over just prior to eating. It was heavenly and didn’t taste overtly lemon-y. Really the strawberries and dates shine here!! YUMMY!
Oh yeah! Put these on some black bean vegan tacos, a bed of spinach for a fresh, salad, or if you eat fish some lovely grilled salmon. We had a feast today replete with power greens, fresh avocado, steamed potatoes, sweet potatoes, and purple potatoes, and grilled salmon. It was amazinggggggggg. My guy does the grilling and I do the veggies in the kitchen 🙂 Does not get more summery or simple!!
1 cup chopped mango
1cup chopped tomato
3 green onions sliced
4tbs chopped fresh cilantro
1/4 lemon or lime juiced
1/4 chopped jalapeño or serrano
Chop and toss, enjoy!!!
Another super simple all fruit smoothie for starting out your week right! Get yourself hydrated and full of all natural energy and antioxidants. I know you need it on a Monday morning!! I sure did 🙂
16oz frozen figs
6oz frozen blueberries
1/2 tsp cinnamon
about 1L water
Blendo all in high power blender!
Garnish with fresh mint leaves (I couldn’t find mine for photos!)
2 ingredients, that is all I used. You could certainly doctor this one up with some sunflower seeds, cucumbers, diced tomatoes, etc. but I ate it with nothing but spinach and mangoes! Weird, but delicious in its simplicity 🙂
2 cups spinach/power greens
2-3 small ripe mangoes
Cut the fleshy “cheeks” off of each mango, and cut into cubes. Scrape off from the skin and place on top of greens in your bowl. Then cut away remaining mango flesh from sides and seed. Place these remnants in blender with 1/2 cup (or so) of water. (Alternatively you could use a nut/seed or ‘milk’ of choice). Blend until a creamy sauce results. Pour over your salad, toss and enjoy!! Tasty, summery, whole, real ingredients 😀 ❤
Yummy fruit fest! This is like blueberry apple pie- in an easy to drinkable form! Easy delicious nutritious! Blend and you’re out the door!
2-3 red apples
2 cups frozen blueberries
Water to desired thickness
Cinnamon, 1 tbs
Blend on high!
Makes 15- 30oz (depending on how thick you make it based on amount water used).
As a southern gal, coleslaw is a traditional part of a multitude of different meals. But it is always heavily laden with mayonnaise, making it neither healthy nor vegan! So I made my own creamy tangy version, the perfect side dish to virtually any meal, perfect vegan pot luck option (gotta make sure there are some veggies at the party), or perfect entree topped with some edamame/avocado/brown rice.
1/2 Purple cabbage, finely chopped
1-2 green onions sliced
1/2 red bell pepper, chopped
4-5 baby carrots, shredded
Jalapeño, 1/2 chopped fine
Basil, 3-4 leaves
For the sauce:
1/4 cup cashews
1/4 cup water
1/2 lemon squeezed
1tsp fresh grated orange zest
Tiny piece each of raw ginger/garlic
Blend sauce ingredients on high to yield a creamy frothy concoction, drizzle over cole slaw, toss and enjoy!! Garnish with any crushed nut of choice, some cilantro, or even some edamame 🙂
