Vegan Pumpkin Waffles! (with spiced apple compote)

Whether or not you had pumpkin pie yesterday, there is never a bad time for pumpkin waffles! The spices of fall combine with creamy pumpkin and a crunchy waffle bite, for a heavenly brunch food.   I cooked some chopped apples with vanilla extract, a little water, blackstrap molasses, and pumpkin pie spice on the stove until the apples became soft, for a spiced apple compote topping! Also pictured is serving simply with syrup and spiced pumpkin seeds. You could even add some cacao nibs or chocolate chips! So good!

You need:
1/2 cup pumpkin purée

1 banana, mashed

1tsp apple cider vinegar

2tbs ground flax

1.5 cup rice milk

1 tsp vanilla

1/2 tsp each baking powder and soda

1/2 cup chickpea flour

1/2 cup oats

1 cup buckwheat flour
Simply mix all ingredients well in a bowl, then scoop into a hot greased waffle iron. Because of the thickness of the batter and the moist texture of the pumpkin, I let these stay in the waffle iron longer than typical waffles. When the green light would come in signifying they are ready, I checked and each time they were still doughy in the middle. So I closed it up again and let it cook until the green light came on again after a few more minutes. You can just check periodically until they are cooked to your liking!  Top with fruit, pumpkin seeds, syrup, cacao nibs, spiced apples, and enjoy!!!

Simple Savory Dinner Waffles

I’ve been experimenting a bit lately with Oats and how many different things you can do with them in great simplicity! Ever having soup or a salad and need a simple while grain side? This recipe could not be more easy, and the waffles freeze well for instant access 🙂 These could be enjoyed either savory or sweet, angel they are born neutral. No added ingredients of any kind, simply oats and sparkling water!

You need:

2 cup rolled Oats

1 cup mineral waters
Blend, pour into waffle maker, and enjoy! This made 4 waffles in a smallish waffle maker. 
Serve with salad or soup for a quick healthy addition to any meal! Top with avocado or hummus, pb and j… 

Simple Protein Powder Waffles

These turn out beautifully, and the nutrition facts are truly unbeatable! This recipe serves 1 and makes 2 waffles and has 3 ingredients (plus water and toppings)!  I love waffles, the way liquids pocket into those square crevices, the crunch that pancakes simply don’t have. I have a cheap waffle maker, the only trick with these since the ingredients are so simple, is to only cook them for about a minute. The protein powder makes them cook quickly, and if overlooked they will dry out.  

Simply preheat your waffle maker and spray well with non-stick cooking spray.

1 egg

1 scoop whey protein powder (I used PEScience)

1tsp baking powder

About 1/2 cup water ( add the water very slowly until you get a nice, just pourable consistency)

Once combined, pour half your batter into the waffle maker, checking on it at about 1 minute to see if it is the consistency you like. You can always close it and leave it in a little more, but don’t want to overcook. Repeat for second waffle.
Top wth cinnamon, fresh fruit, and other choice toppings! 

In lieu of syrup or honey, I mixed 1.5 tbs of vanilla flavored powders peanut butter (like PB2) and drizzled it on top! With some fresh strawberries, I got a real PB and J thing going without any added sugars 😀
So good, so high in protein but low in sugars! Easy to feel like you are having a treat while really nourishing your body 🙂

For the whole waffle recipe it is about 210 cal, 8f, 29 protein, only 5 carbs.With a cup of strawberries and the pb drizzle, the whole shebang was only 290 cal, 9 fat, 34 protein! 


Cornbread Waffles

I love cornbread. I love waffles. I love savory breakfast foods. I love home cooked southern meals. So cornbread waffles are a food of my dreams 🙂 

You need:

 1 cup soy milk

1tbs olive oil

1/2 tsp salt

1/2 tsp baking soda

1/2 tsp baking powder

1tsp coconut vinegar

1 cup cornmeal

1/2 cup brown rice flour

5-6 dates 

1 tsp flax

3-4 tbs jalapeños 
Combine all ingredients in high speed blender and pour one by one into hot, oil sprayed, waffle maker. Enjoy one by one as a savory waffle with your dinner! Top with chili, cheese, beans, greens, whatever your heart desires! Enjoy!
